It depends on your subject matter. I rarely need more than five when I am photographing stained-glass window with the sun behind the window. Often three is ample. The only circumstance when seven may be needed is if you are shooting into the sun. In these circumstances, HDR will often produce rather flat results that need considerable tweaking post-HDR. I tend to use a spacing of mainly one stop or occasionally 2/3 of a stop.

The number of photos depends on the scene, but you should not use the step greater than 2ev. The step 1ev is most often optimal.
