Just downloaded this software today and am excited to dive into its potential. I have a nice size screen at 27" but have to always lean into the monitor to see the User Interface since the boxes are so small. Tried looking around to see some options for resizing but I can not find any answers besides a response indicating it will be an option in the 1.6 release. I have 1.6.7 and only see an option for large in the preferences which does very little to be honest.

Can any please help?

Welcome to Affinity Forums :)
The only option that can help here is set the Font UI Size to Large (I believe that's what you have discovered). Are you using a scaled resolution on your Mac higher then the default screen resolution (in macOS System Preferences, Displays section)? Setting it to default should provide a decent UI size for all apps at regular distances from screen.

I am new to this iMac so I was not aware of the resolution preferences. I am running in a 27" mac at 2560X1440 . It looks nicer at 2048X1152 but i am concerned about the quality I am seeing. I am shooting with an old camera so it probably does not matter. 

Just curious. I see the tutorials have a large UI. Do you know the resolution they were captured in? Really new to photography and all of this so I just want to make sure I have the setup correct before diving too deep

If you are using an iMac 5K (which seems the case) the ideal setting is the one you are using - default which looks like 2560x1440 visually (4 pixels per dot) - all other scaled resolutions will result in a slitty blurred image. 2048X1152 being a scaled resolution will not appear as sharp as the default one.
