How do you convert the stroke perimeter of a shape to "pen" style lines that can be broken?

I have a circle (perfect, not oval) who's perimeter I want to "cut" without the fill or connecting cut portions. I just want the stroke around the perimeter to stop and start in different spots.
I could do this with the pen tool, tracing where I want to start and end each portion, but then it won't be a perfect circle. Expanding stroke and cutting results in sharp cuts; I want the ends to be rounded and node-editable like a pen line.

Any tips?

Layer > Convert to Curves should work for objects created by any of the shape tools.

I've done this, and when I delete portions they just connect and create two different shapes.
