If I switch to erase with another brush and return to painting, it now paints with the erase brush. If I go to Erase in another category, the Paint brush follows along to that category and brush. If you don't want to share them, you should find there's an Assistant Option for that, but I'm away from the iPad now so I can't tell you what it is.
