In Adobe indesign there is an option to "Create outlines" of text, which converts all the text to paths. Is this possible to do Affinity Publisher? Equally, you can leave the text editable and convert it to curves on export if exporting to a PDF file. The option appears in the Advanced section of the PDF export dialog under Embed Fonts > Text as Curves.
