Affinity is constantly coming out with new updates and I keep getting a pop-up notice whenever I load Affinity.  Is there a way to turn off these notifications?  I can always update according to my schedule.

I don’t think there is an official/nice way to ‘quieten’ the update notifications in the applications purchased directly from Serif, but I think there should be. (There may be a 'hack' that I'm not aware of but I wouldn't like to try it if one existed.)
That might be especially useful for organisations that have many seats and don’t want users ‘randomly’ upgrading leaving different seats with different versions (or maybe that’s already there in some kind of mass-install version which I’m unaware of).

This has probably already been requested so if you find an existing request you can add your voice to it.

You don't say which OS or which Affinity app, or where you originally bought them from. But in Publisher, for MacOS, bought from the Affinity store, I get this:

There's no equivalent in my versions of Photo or Designer, which I purchased from the Apple App Store. In my case, the App Store handles updates for these two.

 

Affinity Photo 2.6.3,  Affinity Designer 2.6.3 Affinity Publisher 2.6.3, Mac OSX 15.5, 2018 MacBook Pro 15" Intel.
