If you right-click on the channels named Background Red/Green/Blue/Alpha you can create a new Greyscale layer from that channel. Or you can create a Spare Channel by right clicking on either the Composite section or the Background section (Background is just the name of the Layer). With the Spare Channel you can then load it into any of the channels of a new/different pixel layer, or load it as a Selection.

I have never mastered color management, period, so I cannot help with that.
