When I want to colour my scetches with the brushes, the strokes I make always end us going beyonf the sctech. My question is, is there a tool / adjustment I can make so that the strokes form the brushes precicly align themselves to the outlines of the scetch so that you dont have to worry about paint over the outlines of the scetch.

Which app are you using Affinity Designer, Affinity Photo, Affinity Publisher?

The short answer is no.
 

If the curve (brush stroke is open it will fill but only from the start node and to the end node see example below.

You can close the curve and bend the line to extend the fill.
