Welcome to Affinity Forums :)
Currently the Pen/Node Tool are not "path aware". Ben (one of the developers) is currently working on improved snapping options which i believe will address most (if not all, i don't have much details at this point yet) those issues. I also don't have an ETA for this but rest assured it's coming as soon as its ready.

That’s correct.
The only problem is that I cannot for the life of me get snapping to work with the pen tool and the 'O'.
Have you seen the dedicated snapping options for the Pen Tool on the context toolbar (see below)? These options do not cover every case you can think of, but improvements such as snapping to path intersections are promised for the near future …
