Workaround for Shape Builder Tool

So I've tried to recreate the form of this tutorial, but I cant get a satisfactory result with the boolean operations that get mentioned as alternative for the Shape builder tool of Photoshop. 

So I wanted to ask if someone knows some workaround for this problem in Affinity designer.

You can try out on the Ai project file when loaded into AD.

A workaround to recreate such forms etc. the more or less quick way is, to vectorize (trace) an image, either manually by hand (via pen + pencil tools) or via a tracing software.
