I just spent ~10 hours editing portraits for a client only to recognize that everything is saved as 72 DPI... I can figure out to manually change from 72 > 300 DPI for each individual file, but I want to change the settings so that EVERY photo's DPI is 300 going forward. How can I do this?

For multiple portraits (files) try to bulk change the DPI settings via batch processing together with some applied DPI change macro.

Other than that when creating new documents and setting up the initial DPI to 300, it will usually be preserved and remembered next time when creating a new doc.
