Thanks. In the meantime I found out that Sketchbook from Autodesk (its free) supports grids with a variety of vanishing points, incl fish eye grids. Koalatools.com sells different kind of transparent grids ($ 3,95 each; $ 15 sets of 5 grids) and sketchbooks with printed grids.

Is it possible to create grids with a different number of vanishing points (from 1 to 5)? I want to create Escher-like (fisheye) drawings.

I cant't find a way to convert the content of a layer to a smart object. Something like there is in Ps where you can paint something and right click on the layer to covert it to a smart object
