Your sample PDF file seems to have just an image of a page, not actual editable text. How did you create it?

Then how do I edit the text from a design that’s already made without doing the whole design over again so I can make the design more my own.

from the iPad it’s very confusing and I have designs that are already made but want to alter the text a little bit but don’t know how.

If you give us an actual design we can tell you. From a picture of a design we can only guess if it's possible and what you would need to do.

What Walt means is there is a huge difference between a picture (a raster image) of text & a text object. Raster image files like JPEGs do no have individual text objects, just pixels of various colors. So if the files you are working with are JPEGs there are no text objects in it. Some of its pixels may be arranged to look like text but they are not separate objects.

Josie, on most of these images you can probably overlay the ‘stuff-that-looks-like-text-but-isn’t-really-text’ with a block of the background colour and add new text over that but you will have to do some research – and maybe some shopping – to get the correct font(s).
However, the thorny issue of copyright may come into play if you want to publish your own versions.
In the UK – and this is only my current basic understanding, and I’m not a lawyer, and this is not legal advice – you can probably use an image without permission if you are reviewing it or are making a parody of it but most other uses require permission from the copyright holder. (And other countries have their own copyright laws.)
Since you would only be changing the text you would still be using a lot of the original image and, as such, may fall foul of any copyright that is extant.
You are, of course, free to do whatever you want if you are not worried about any possible legal repercussions but that would have to be your choice and you should be ready for any damaging consequences.
Bottom line: Check the copyright of an image before your use it. You might be okay, but check anyway.
