export black, not 4-color type

My printer requires that the type of the pdf file we submit is black black, not 4-color black. 

When I export the pages, which includes photos and art, I do select greyscale pdf. Yet,  printing company says my type is 4-color black.

Is there a way to set the type output as black?

Select the object you wish to apply the colour, select the Swatches panel. On the right is a small group of swatches (None, Black, 50% grey and white) select the Black (100%K if exporting to CMYK) to apply to the object and export to PDF.

What do you mean by ‘Black black’? 100% K is black, not rich black, or at least it should be!
