Hi Eddy-2 :)

We've changed the way tables work in Affinity, when using Delete or Backspace with cells selected this will always default to controlling the cells contents, meaning it will delete and characters in the cell, rather than deleting them.

If you want to remove any cells from your table you'll need to either right-click on the row/column and select Delete or alternatively use the double arrows at the end of the row/column to add or remove cells by dragging these, or clicking them and typing your value in the context box that shows. Select it with the Move tool (the arrow).

I have never mastered color management, period, so I cannot help with that.
