Letter size is resized in text blocks instead of adjusting to fit text block

One thing that is counterintuitive is pasting text into text blocks. When I paste text into a text block, the block extends way out off the page to fit the text block instead of placing the text into the block at the size the block is. THEN, when I resize the block to fit the text block on the page, the point size and letter width of the text is adjusted instead of the text flowing as is to fit the text block. This is very frustrating. I don't want squished or smaller text, I just want the text block to fit on the page.

Or to put it another way, my first thought is that it sounds like you have used the artistic text tool rather than the frame text tool. Here I have circled the icon for the tool you are looking for:
