Brand new to graphic design, so apologies if this is really obvious (also tried searching but can't quite find what I'm after). 

If I have a donut shape (or two circles, subtracted from each other) and I want to separate them out into, say, 20 segments. How would you go about that?

I've tried creating pies and intersecting and I've tried creating a 20 pronged star and intersecting but when I do so, everything just disappears. 

Any pointers welcome!

Welcome to the forums :)

The quickest way of achieving this in Affinity is to use the Ellipse Tool, first draw your ellipse and then select Convert to Doughnut on the context toolbar.

Now you can set the Hole radius until you are happy with the overall shape of the doughnut, for your design of 20 segments you'll need to work out the Total Angle of each segment - 360/20=18°. Set the Total Angle to 18° and you'll find you now have 1 segment. duplicate this segment using CTRL/CMD + J and rotate it 18° in the Transform Studio. Now use CTRL/CMD + J again to Power Duplicate the object, which carries the rotation of the last object, until you have a full circle shape. I hope this helps!

If you’re going to do it that way, why not simply choose the Donut Tool in the first place? :/

I find it quicker and easier to use the Cog Tool.

Perhaps I should have finished my coffee before suggesting that, the Donut tool certainly does make more sense! :$
