You can also go to 'Document Setup ...' and type in new dimensions. Make sure 'Objects will: Anchor to Page' is the active button. If you see overlapping elements make sure that 'View > View Mode > Clip To Canvas' is active.

What do you mean by entire document? I have one with two artboards, and another with no artboards. Or perhaps it is the word crop I am misunderstanding. You can clip items and use that as a form of cropping.

Designer uses PAGE as area which art is presented. It makes not much sense to alter its size other than using document setup.

You can though use artboards freely and use artboard tool to freehand the size.

Well then I guess I'll just go and crop the documents in Photo. I had everything in an artboard and the client wanted the entire document cropped. I go to use the crop tool and it wouldn't crop anything. Click, drag, crop...

Anyway it was just a suggestion, thanks :)

If you have a photo that needs cropping then select it and hit the crop tool in the tools. First is the selected photo then using the crop tool.
