Switching to the Smooth Selection Tool and increasing the radius will smooth the selection line, this sometimes works better in conjunction with the Grow/Shrink Selection Tool. As Angelos58 points out, you can adjust the selection to get a nice smooth outline, but when tapping accept, the selection reverts back to the original rough (pixelated) shape.
