How do I add a picture to a font so asa to make a plain font colourful?

You can grab the picture layer onto the font layer to make it a child of the font layer and the image will look like the font shape.

For example, something sort of like this Colorful text.afphoto file, which also includes a multicolor elliptical stroke on the text layer (made with the Gradient Tool) for even more (if less tasteful) color variation.
