I'm really hoping I can move from PS to Affinity Photo but I'm having trouble replicating one of the main things I need it for, hopefully someone here can help. 

In PS to pull the illustration linework off of the background (paper) I follow these steps-

Adjust levels to high contrast B&W

Select all, delete

Open new layer - enter quick mask - paste 

exit quick mask, invert selection - fill

This gives me perfect reproductions of my line work but when I try in AP, I get to the 3rd step of entering quick mask and when I paste, nothing appears in the new layer. I've tried what seems like 20 different variations to get it to work but I don't know AP that well yet so I figure there's some slight difference from PS that I'm missing to make it work. 

Any help you could give would be huge.

I think AP quick mask/mask layers do not support pasting image. AP is not very advanced in that regard.

(You probably meant: Select all, cut)
