R C-R Posted May 9, 2019 Share Posted May 9, 2019 In neither Mac nor Windows does the default app "take over" any file type, preventing you from opening files of that type with any other app that can open them. The default is just the app assigned to open those files when you double-click on them, but for example you can open any supported type of file from an app's "Open" file menu. Alternately, you can right-click on the file in Finder or Explorer & use the "Open with" option in the drop down menu. For most apps, dragging & dropping the file onto the app's icon also works. But if you want to learn how to change the default assignment, you can find lots of articles on the web that explain how to do that, for example this one for Windows or this one for Macs. Or do a web search on something like "change default application" to find others.
