Hello,

How can I exporte a EPS file and retain the Pantone colors ?
The printer told me my colors are in CMYK on the EPS file.

Not really in this century. But I don't know what the purpose is. In general and in nearly every use case if even relatively modern software is involved, PDF is superior. EPS is not color managed whereas a PDF is. EPS cannot retain transparency if desired whereas a PDF can. Software support is slowly going away in modern applications, etc.

Yes. You can use PDF/X-4 or one of the Compatibility types of of PDFs. PDF for Export or the PDF for Print both are non-PDF/X and retain layers. I do it with files intended for cutting (so a cutline countour with a special spot color name).

An addendum. You have to actually use layers created by the Add Layer button in the AD file. Else everything ends up in a single, non-layered PDF.
