Welcome to Affinity Forums :)
If the white bars are lines (not shapes) - which seems to be the case - you have to expand them first going to menu Layer ▸ Expand Stroke to convert the lines to shapes. Then use the Subtract boolean operation to subtract the object on top from the other below. You can only perform boolean operations between shapes (not between lines and shapes).

[EDIT] Divide can be also used here - just delete the parts you are not interested in.

You will have to duplicate the brown shape if you want to subtract it from other vertical bars.
