Colour fill between lines and delete segments of shapes

Hi all,

I'm completely new to any graphic design software and I'm trying to design a logo. 

I'm wondering how I would complete the 2 following parts of my logo.

1. How do you fill is sections of a layer that fall between to lines.

2. How do you delete segments of shapes and lines.

 

I have marked up the following image to try and explain what I'm after. Sorry this question is not as detailed as I would like it to be. Not sure how else to explain it.

Hi, demonLaMagra,

 

Here is a quick file saved w. history. You can step thru what I did to come up up w. something close to what I think you want. Some of the steps will probably not explain a lot.

Here is my base construction. 

Make a donut.

Center a circular ellipse within it.

Convert to curves.

Add together.

Draw a few lines to make the outside of a wedge shape.

Join those.

Draw another set of line.

Join those w. the earlier set.

Give the form a fill.

Nest it within the ellipse array, which clips away from view the excess.

Draw another shape which will be subtracted from the ellipses.

Subtract.

Total time, maybe a minute and a half
