How does Affinity Designer handle imported Files?

Yes you can tell the doc (and change) to use a certain color profile ...

This probably depends on the output media too and if you need to deal with a lot of finer colors (photos/images) only available in a wider color gamut or not. Since the lowest common denominator is still sRGB here for display devices and CMYK for usual printouts.
