I don't think so, saving as a Default does not work for gradients.

If it helps, you could create your own swatch in the Swatches studio.

Select Gradients in the swatches panel, apply your custom gradient to a shape, then right click and choose 'Add to Swatches' > 'From Fill'

See my lovely yellow to red gradient fill.

Note: When you do that, make sure neither handle on the Gradient is selected or it just adds the handle colour as a solid colour, not the whole gradient.

You could also create a Style by right clicking and choosing Create Style (Style 9, below).

You can set a Style as a Default (Edit > Defaults > Save) but that applies to every shape you create, which may be a pain.
