With regards to columns:

You can add rows and columns but how do you set them to none or remove them altogether? There is an option to remove the guides but not the columns

 .....Aware you can set to 1x1 on page and hide columns (which works fine)

But...new doc seems to remember the column options from previous document Also if you set columns and rows;then create a new document you only get the columns

The snapping and visibility for the column guides are tied together so if you make them invisible (via View > Show Column Guides) they won't be available for snap either.

I don't believe there is a way to set up 'default guides' for a new document, you will find you always get a straight 4 columns initially.
