differentiate layers by color

You can, however it's probably not what you're look for. This only works on Layers that have been created using the Add Layer button at the bottom of the Layers Panel. Once added right click and select Properties, here you can specify the name and colour. Once set you see the colour appears as a faded line underneath the layer.

Is there any way globally to change a layer's property color, either in all layers or in all of the sub-layers under the top layer (perhaps by a modifier key)? This would be very useful in identifying  specific objects in my  complex document,  much faster than changing the color property individually on each of my hundreds of layers.

No not at the moment, I think the thin line that indicates the layer colour is way too thin and can be confusing, I think PS has it about right, the only other option I'd go with would be to be able to group by colour and if a layer is turned off to have that colour faded.

I agree that it is a bit thin. I would also emphasize the importance of an obvious color indicator for layers. As I work within complex documents the ability to change layer color for more than a single layer, as well as the top layer color (to change all lower layer colors) is extremely useful. Here's hoping. No complaints. AD has released me from bondage to Adobe.
