Hi JaneAnn,
It is possible to reduce the preloaded assets by clicking on the small arrow by the Assets title eg Misc  in figure below

However if you want to permanently delete them then you can do that by clicking on the Assets 'properties' bun top right

This opens a menu where you COULD select Delete Category which would permanently delete those assets BUT- - - -

I would recommend that you  Export Assets first BEFORE deleting them.  This will allow you to reload them later if you want them again You will be prompted to set a location and a file name.  It will be saved  as 'yourfilename'.afassets  which you can then reload at a later date.

I have checked that this works before posting it.

A further use of the  'bun'  is that you can create a new Category of your own, and then add Subcategories as I have done here.

You can then select something you often use in a document eg a logo, click on the selection 'bun' at the top right of the Subcategory that you want to store it in and choose Add from Selection.

A copy is stored in the Assets panel and will be available to the current document and any others you work on in the future  until you delete it from the Assets panel yourself.
