Just a hack: You could create one or several files as you want, save them and make them in the finder "unwrite-able". Then drag this file or an alias into your dock. Start with this item not with your regular AP-icon and you have your template which you can not save (overwrite by misstake) just create a copy with  "save as".

It isn't really a hack if you set the file's Locked attribute in its Info window.

If you are on a Mac you could also “Check” the ‘Stationery Pad’ box in the file’s Info window.
Every time you then open that file the OS will automatically duplicate it and it will be in the duplicated document that you will actually be working, leaving the original untouched.
