On The JPEG export tab, click on the More button Set your JPEG settings to how you want them Click Manage Presets and create a Preset Give it a name and away you go. Custom presets are only available for exporting to different file formats so they do not appear in the 'New Document' dialog window. However, you can set the color format & profile in that dialog to whatever you want & they will automatically be selected unless or until you change the 'Type' or 'Page Preset' to something else. This is sometimes referred to as a 'sticky' setting -- not a default but one that does not revert to a different setting unless a user intentionally changes it.
