knock out colour for printing

You need to go about this one of two ways.

 

I would generally make a copy of the logo, then subtract the one logo black logo from the background. I would then add a 0.25" stroke to the background using the desired spot color. Then place the second logo on top of it so as to have the black logo overlapping that hole perfectly. This provides a bit of a trap where the black will by nature overprint that 0.25" outline.

 

The second method creates a kiss fit, which is something that will show up with the slightest mis-registration. To do this, simply place the logo on the background, and when you export the PDF for printing, click on the More button and uncheck the Black Overprints checkbox.

 

I attached an ever so simple file. The top version uses method #1, the bottom you need to uncheck the indicated checkbox for it to work. You can check the results in Acrobat. But if you use the first method, you need to leave the checkbox checked.
