Are you talking about white point tool? It does not really set white point but colour balance. So it would really be "grey point".

 

In basic develop there is black point but no white point... where:

I would say Exposure works like white point setting, Black point sets the black point and Brightness adjusts gamma.

I practice white and black point setting does not just stretch the histogram, it compresses the very end of histogram to avoid clipping, at least to some extent.

No, not the white point tool. In Aperture (AP works good together with it) there are white, gray and black points picking them with the pipette and then this point becomes the choosen color and the rest of the image changes. I know to do it otherwise, but sometimes, working in files without black for there was not enough light for instance, it is a good and quick help. May be we see it later.

You can set white and black point using the levels or curves adjustment 

 

using the levels adjustment you can also get a clipping preview by holding down the alt key

(using the gamma slider is an option to change the balance between light and dark tones and thus adjusting the "grey point" - no picker though)

 

you can also set white and black point for individual channels which is basically what your picker is doing but this is hardly accurate in AP as you don´t get clipping indicators in this case

Seems there is no picker tool for setting black and white points. Personally I think they are not exact enough to be useful, it would be better if there was an "auto" button for AP to find and set them automatically. Unfortunately they are also missing in Develop Basic, Curves and Levels.

Yes. It is not that there are no other ways. But have a look to Aperture. Beside the curves there are three ways to check the image first very quick it it is complex to find the best way, as in Jazz-Clubs without flash use for instance. In Aperture you have Black, Gray und White point and two times an automatic: black-white and color. So one can pick five times different and then start from one of it the fine tuning.
