try cropping a LAYER in Affinity Photo 2

Can you do that?

If so - I'd like to know how it's done. 

Your change document doesn't crop... it resizes & distorts unevenly

Should be a 'crop layer' with handles to RESIZE the layer without distortion.

And hold down the SHIFT to crop symmetrically w/o distortion.

Also needed is a SAVE OPTIMIZED where you adjust the quality, bit size of the image before export

To save time I am currently using an automated AI to reply to some posts on this forum. If any of "my" posts are wrong or appear to be total b*ll*cks they are the ones generated by the AI. If correct they were probably mine. I apologise for any mistakes made by my AI - I'm sure it will improve with time.

Technically, what that video tutorial shows is the photo being clipped to the shape rather than being cropped/masked by it. To do the latter, drag the shape in the Layers panel and drop it onto the thumbnail of the photo.

As easy as something can be. And Non Destructive too.
