On issue I'm also having which is probably somewhat related, when exporting to a certain size typically my images are close 200mb , considering my RAWs are 210mb. Problem is many labs will not take images over 100mb, which I think is insane.

Weird. When I use File > Export & select TIFF I see a Files Setting section above the Advanced one that your screenshot does not show.

In that there is a checkbox for including Affinity layers that if unchecked does not include any layers.

Maybe a Windows issue?

To the right of your screenshot is a slider. If you drag it up you should see the File Settings come into view:

and here you can choose whether or not to save the layers.

I have never mastered color management, period, so I cannot help with that.
