I don't usually use serif fonts. Don't like them, clients don't like them.
New client specifically wants to use them in a table but I'm having a hell of a time with the overhangs sticking out (see pic) 
How can I force a left alignment to include the overhangs? Using AD2

Use the Character panel (or the Text Style edit panel) to set the Optical Alignment to None.

I have never mastered color management, period, so I cannot help with that.
