Not sure if I'm missing something, but typically when editing photos & exporting a JPG with AP2, shouldn't the program be updating the "Software" EXIF data field?  Is this already an option which I've not set somewhere?

It's a feature that OM Workspace (the Olympus camera RAW software), GIMP and Lightroom all utilize, and when viewing exported photos at a later date after running them through post, easily allows the user to see which application the file was edited with.

I'm not sure about an EXIF field named Software, but I see the following updated when I export a JPG file from Photo 2.6.2:

Hmm, if I view the actual EXIF data, there is a field titled "Software".  If you look at an image file's details via Windows 'Properties', it'll instead list the field as "Program Name".  This field gets updated by other editing apps, though Affinity doesn't.  It seems what Affinity does instead is add entirely new XMP data to the photo, including the information listed in your post.
