Is there a way to change a square photo to landscape other than just cropping the photo to a landscape ratio? I found a tutorial for Photoshop on-line but it didn't translate well to Affinity.

Short answer is no.

Long answer is you'll need to add to the side(s) of the square image. This may be possible with using the Clone/Stamp tool or the Inpainting brush or you may need to use some artificial intelligence software. Most likely the last is what was used in the (unnamed) Photoshop tutorial, most likely it will be highlighting the latest greatest Photoshop feature.

I have never mastered color management, period, so I cannot help with that.

If you don't mind distorting the photo by stretching it you can just use Document > Resize Document with the width/height lock disabled to increase the width, but it will probably look much worse than what has already been suggested.
