I have scanned an image as a jpeg and imported into Affinity Photo 2.5.7, cropped the photo as required and saved it as .afphoto. I have then tried to print the new document in a 7x5 format but no matter what I try Affinity always automatically adjust one of the dimensions. I have tried to resize the document/photo but it allows me to to have a width of 5" but then adjusts the length to 7.3.. How do I get to print exactly 7"x5".

Odds are you have the width and height dimensions linked.

I have never mastered color management, period, so I cannot help with that.
