I've seen in video tutorials as well as in the official documentation for Photo 2 that it should be possible to change the resampling for the mesh warp tool to something like nearest neighbor. This feature does not seem to exist for me, and I cannot find any information on how to turn it on. I just updated to the latest version today, and am using Windows.

I've circled the empty area where I believe it should be in this image.

Can you provide the urls of the tutorial or documentation?
I didn’t see anything related to mesh warp filter.

In version 1 for the destructive mesh tool there was a resampling option.

The thing is, this is also mentioned in the documentation for the Mesh Warp Tool for Affinity Photo 2, and I've seen other people have the setting visible in Photo 2 tutorials.

I think it was, in some first version of the version2 cycle, still present.

Shouldn't it be still accessible somehow? I couldn't really find anything online saying that they flat-out removed it.

All I can say is that It was a decision made by the developers.

Perhaps you could be so good as to enquire on the users’ behalf about the reasoning behind that decision, and then relay the answer to us.

I remember older post that Affinity would never remove functionality in future releases (except betas) as argument against implementing desired features faster and risking removal for unforeseen reasons
