When you set graphic text on a path, its attributes (outline, color, etc.) can no longer be changed. If you select the path and try to change the attributes, the text attributes are changed instead. This is not intuitive, but confusing. It may well be useful to first set up a visible path in order to align other objects with it or to change the fill of a closed path later, for example.

A workaround is to create an invisible path and duplicate it, and to use only one path for graphic text. You can then select the path without text and the path with text separately via the layers panel, editing the latter without changing the path attributes. You would also have to group both paths if you want to scale them afterwards.

However, this approach requires that you know exactly how to do it and what the result should be in detail beforehand.

If you have Publisher, you can use the Text Frame panel to change those attributes for the path

If correct they were probably mine. I apologise for any mistakes made by my AI - I'm sure it will improve with time.
