Odds are that this graphic

doesn't have Scale With Object checked in the Stroke panel

I have never mastered color management, period, so I cannot help with that.

If he has scale override set to on (which he seems to imply) you do not need to have Scale with Object set when doing aspect correct scaling

What I can't tell from the screenshots is if he has actually enabled scale override
