I am using Windows 10 Enterprise LTSC, Intel Core i7-4770K CPU, 16GB RAM, NVIDIA GeForce GTX 750 Ti, no hardware acceleration, dual monitors, Publisher 2.5.5, and LibreOffice calc 24.8.2.1.

I am working on a three volume boxset with a separate Abridged edition (ie four Publisher documents). I am often working with three or four files open and Publisher unpredicably crashes.

For example, when manually generating the index, I search for a term in each document in turn, and type the resulting page numbers into Libre Calc. Despite running this with no other applications running, it still crashes. It once crashed when working on several documents without LibreOffice loaded. Sometimes, it can function fine for hours, othertimes, crashes after 20-30 minutes. It has crashed when there have been three docs open, but never with only two.

The publisher docs are not excessively large, ie each about 7Mb each comprising 184 pages, 148, 168 and 120 pages respectively. There are a lot of images; about 80 across the four docs, but they are linked not embedded.

Are you getting crash reports, or anything interesting in the Windows Event Log?
