Just bought v2 versions of all Affinity software and now I'm wondering if I delete the older versions of the software, will I be throwing out files which are shared by both the old and the new?

If someone from Affinity could explicitly list which files associated with the v1 software CAN be thrown out and deleted would be so helpful.

The reason I need to toss out the older software? No more hard drive space!

If there is an uninstaller for v1 software for macOS, that would be even more helpful. Thank you.

You can just drag the V1 app to the trash & empty it, then look in your per user (~/Library/) folders listed here for the application support folders (note that they will be different depending on the store & macOS version you have) to find where the various support files & folders are located.
