I'm new to Affinity Publisher, I've been using Indesign for several year. So I will be regularly coming up with questions.

If I place something on a page and then change my mind, how do I revert to the last saved version?

Welcome to the Affinity forums.

If I Placed something, and changed my mind, I would just Edit > Undo (Ctrl or Cmd + Z, by default, depending on your OS).

But in general, in Affinity applications, to revert to the last-saved version, you would Close the file (File > Close, and don't Save when prompted) and Open it again (File > Open Recent, or File > New and click on the Recents tab).

There is no such menu entry in Affinity. As an alternative to closing and reopening you can use the History Panel: move the slider or scroll bar to find and select an entry that says "Add" or starts with "Add." You also can use the arrow up/down keys on your keyboard to scroll through the history entries, to select one you have to click on it.
