I use Windows, but my client is using Mac and I've noticed this issue on both ends. 

Using Affinity Publisher, when we make a change on our Master it's not updating the change to pages with that master. 

Specifically, we have a page number field on the Master Page and we changed the text style for it. Clicking on the page number in the master we can see that the text style is applied, but the pages throughout the document still have the old text style in it.

It isn't entirely clear from your screenshot since the layer's panel isn't visible but it's possible that a text style applied to the frame has been manually applied to the pages at some point, which has unlinked the text attribute from the master page. This can be confirmed by hovering your cursor over the master page text frame layer in the layers panel on an affected page, a tooltip should then prompt and advise that the text attribute has been unlinked from the master.

In the pages panel if you right click a Page > Apply Master and then re-apply the page number master again with the content set to 'Clear' instead of 'Migrate' this will clear the existing text layers and re-apply them from the master. Making any subsequent changes to the text styles via the master page should then be correctly inherited from the Master on your regular pages.
