Good afternoon:
I have searched for information but I have not found exactly what I am looking for.

1. I want to keep the publisher file (book), but if I click export, I can no longer edit it.
I would also like to be able to export it to PDF and Word.
How to get it?

2. This is driving me crazy. I have the "no widows" "no orphans" option checked.
But the pages do not have the same number of lines.
I've read that I have to manage character spacing, but isn't there another option?
There are times I don't even understand why it separates on the next page.

Sorry, but I don't understand what you mean. Exporting should not affect your ability to edit the original file, as it creates a separate file.

Exporting to PDF is easy. Just choose PDF from the dropdown at the top of the Export dialog, and then choose the further options.

Exporting to Word format is not available. You might be able to Copy from your Publisher file, and Paste into Word. Or have Word try Opening the PDF you exported from Publisher.

Having those options chosen can cause the number of lines to be different. 

Without seeing your document (at least screenshots, but ideally a small sample .afpub containing those pages) it is very difficult to say what can be happening as a result of the Flow options.

Thank you very much.

1. I'm afraid. On one occasion I exported to PDF and I could no longer edit the publisher document. I don't know what I could have done wrong

1.1. Thanks for the advice. 
The thing is that I would like it to stay the same, including the images, in its place and everything.

2. This afternoon I'll send you some screenshots. Right now I'm at work and I don't have the iPad.

If that's typical of your document's layout, I'd reckon there's a strong chance that Word will be able to open (import?) the PDF that you can export from Publisher and accurately maintain the design.  I've opened a handful of PDF's into Word over the years (on desktop versions, I haven't tried it on the mobile versions of Word) and have generally been pretty impressed by the results.  You've nothing to lose by giving it a shot - let Microsoft do the heavy lifting to get the Word version…
