Welcome to the forums @keithfishbiscuit,

To clarify, are you referring to the App desktop shortcuts or a specific document/file type? Could you possibly send us a screenshot of these Icon's you're referring to that are now blank?

If it's the desktop shortcuts to launch the apps, I'm not sure how the installation of another app such as Libreoffice has had any impact on the shortcut icon, but if you originally installed the apps via the .EXE/MSI installer it can be changed under the right click > properties > shortcut > change icon. It should be pointed towards the default installation folder for the app icon, shown below for Photo.

If you installed via the MSIX package you could re-create the desktop shortcut via the shell:appsfolder and this should restore the original shortcut (see guide below)

It looks like you have the MSIX version of the apps installed, these are sandboxed and as such they won't appear in a standard installation directory. I'd suggest deleting your existing desktop shortcuts and then following the guidance in the FAQ below re-create your shortcuts via the Shell:appsfolder.
