I wanted to change the shirt color of a man in my photo and did the online tutorial. After selecting the shirt, I opened recolor. The color panel does not appear to have a selection for white or beige. I think I am missing something obvious here, can anyone help?

If you mean the "Recolour…" adjustment: Doesn't its Lightness slider do it?

Visual help based on @thomaso reply. see lightness slider dropped to 50% to intensify the colour.

No it just lightens brightly colored hues. There isn't a place on the spectrum that provides for a true beige or an array of earth tones. Slider does not get any of the colors to beige or white spectrum. I could be missing something here, but I attempted all the sliders, etc.

Combine all three sliders to achieve a certain colour, e.g. beige or earth tones.

If the HSL colour selection mode of the Recolour Adjustment appears uncomfortable you could use another method to colourize the pixel selection, e.g. with a copy of the selected image area as new pixel layer + converted to an image layer, which enables you to use any colour chooser mode, the swatches panel included.

Or simply a Fill layer for the pixel selection, like so:
